從來沒有用過 unbleached flour 做包子和饅頭,因為覺得用普通已漂過的麵粉成品顏色是灰灰的,如換了無漂白的那豈不是更灰黒。直到那次超市做特價,於是買來試試,出來的顏色竟是微微黃,比起灰灰的好看多了,所以決定以後用它來做中式包包了!😋
中筋麵粉 All purpose flour 200g
水/奶 Water /milk 110g
糖 Sugar 20g
油 Oil 2g
酵母 Yeast 2g
鹽少許 Salt a pinch
1. 將所有材料混合然後搓成三光麵團

2. 加蓋發酵1 小時

3. 再將麵團搓實然後鬆弛10分鐘

4. 桿平成一片
Roll the dough out into a sheet
5. 捲起成一長條狀然後切成數份

6. 放入已有熱水的蒸鍋中發酵半小時
