嚴格來說蛋糕面上的公仔牌不是朱古力,因為它是用 candy melts 來做,其主要成份為油和糖,所以味道難和朱古力相比,但用來做公仔牌則比較好用,容易溶解和不會翻沙,成品又夠硬身。
做法是在底圖放上膠片貼膠紙在四角固定,用竹簽沾上黑色candy melts 勾出線條,然後在顏色區域填滿已校色的candy melts ( 可以用油溶性色素調色),待乾後撕去膠片即可,緊記出來的圖案是和底圖相反的,所以底圖字樣是需要反轉的。
開心果蛋糕 Pistachio sponge cake
蛋 Egg 4 pcs
糖 Sugar 80g
低筋麵粉 Cake flour 90g
牛油溶液 Melted butter 35g
開心果 Pistachio 50g
1. 麵粉加開心果放入攪拌機中打至幼細然後過篩去大顆粒

2. 蛋加糖座熱水攪和至暖/約40c

3. 離熱水後打至硬
Remove from boiler and beat until stiff
4. 分三次輕輕捲入已篩麵粉
Gently fold in sifted flour mixture by 3 times
5. 最後加入已溶牛油
Incorporate butter
6. 倒入7吋圓模中用180c焗約 30-35 分鐘
Pour into 7' cake mould and bake at 180c for 30-35 mins
7. 蛋糕脫模涼後橫切成3-4片
Slice horizontally into 3-4 pieces after removed from mould

淡忌廉 Cream 35% 300g
糖霜 Icing sugar 30g
溫呢拿 Vanilla 1 tsp
1. 將所有材料混合然後坐冰水打起至企身待用
