從未試過做奶油忌廉,嫌它實在太邪惡,飽和脂肪太多,年紀大𠄘受不了。但又極喜歡在 YouTube 上觀看唧奶油花的視頻,覺得她們實在了不起,可以做出各式各樣美麗的圖案花樣。
而今次唧雙色的方法也是從 YouTube 唧奶油視頻中偷師,可是薯蓉顏色的對比不比奶油色素強烈和多變,但還可以接受的。😊
撻殻 Tart shell
已軟牛油 Soften butter 40g
糖霜 Icing sugar 20g
低筋麵粉 Cake flour 60g
杏仁粉 Ground almonds 20g
蛋白 Egg white 15g
鹽少許 Salt a pinch
1. 已篩麵粉加杏仁粉加鹽混合好待用

2. 己軟牛油加糖霜攪勻

4. 輕輕搓成團

5. 包保鮮紙雪過夜
Wrap with plastic film then rest in refrigerator for overnight

6. 桿薄麵團放入撻模中然後批去多餘的邊

7. 在底部叉洞入雪櫃鬆弛1小時

8. 在撻皮上放上另一撻模然後放入壓石

9. 180c焗15分鐘後拿走面模

1. 朱古力加忌廉叮約15秒然後攪勻

黃肉蕃薯蓉 Mashed sweet potato 300g

粟膠 Corn syrup 10g

椰子油 Coconut oil 30g

紫薯蓉 Mashed purple sweet potato 300g

1. 蒸熟蕃薯過篩成蓉然後取出所需份量
