傳統咖啡味 tiramisu 雖然很受歡迎,小朋友們卻敬而遠之,所以potluck 時盡量不做有咖啡味的甜點。有次看完電視上教做抹茶味 tiramisu 之後,於是跟著做了一大盤帶去potluck ,竟然很受小朋友的歡迎,食個清光。原來芝士同茶都很夾的,以後可以試試用紅茶,百爵茶或者花茶來代替咖啡呢!
抹茶糖水 Matcha dipping syrup
抹茶粉 Matcha powder 4g
糖 Sugar 10g
熱水 Hot water 100g
1. 將所有材料混合攪勻待涼

芝士糊 Cheese batter
意大利軟芝士 Mascarpone cheese 150g
蛋黃 Egg yolk 3pcs
糖 Sugar 45g
淡忌廉 Cream 35% 210g
魚膠粉 Gelatin powder 7g
水 Water 40g
霖酒 Rum 5g (可以不加 optional )
1. 魚膠粉加20g水混合待用

2. 糖加20g水混合煮至116c成糖漿

3. 一邊打蛋黃一邊倒入糖漿然後打發勻均

4. 加入芝士打勻

5. 魚膠入微波爐叮約15秒至溶化然後加入芝士糊中攪勻

6. 加入霖酒攪勻

7. 打起淡忌廉至杰身然後捲入芝士糊中攪勻即成

3. 快手將手指餅浸入抹茶糖水中然後拿起

4. 輕輕將手指餅壓入芝士糊中

5. 再倒入另一層芝士糊

6. 放入已浸手指餠在面上

7. 雪過夜

8. 脫模後,放上印花紙篩上抹茶粉
