小雞芒果蛋糕 chicken mango dome cake


細女是日本控,喜愛日劇、動漫、偶像、歌曲、食物等等,還在大學修讀日文。
每當她找到喜愛的甜點做型,就會要求做A貨。好像這款雞仔做型就是名古屋的餅店著名出品,但因為模具的關係,只可做到神似而不是十足十,仍然有進步空間。 😊


海綿蛋糕 Sponge cake  
蛋 Egg  2 pcs
糖 Sugar   40g
低筋麵粉 Cake flour   45g                     
牛油溶液 Melted butter   17g
1. 蛋加糖座熱水攪和至暖/約40c
    Whisk egg and sugar in hot water bath until mixture is warm/about 40c    
2. 離熱水後打至硬
     Remove from hot water and whip until stiff    
3. 分三次輕輕捲入已篩麵粉
     Gently fold in sifted flour by 3 times  
4. 最後加入已溶牛油
     Incorporate melted butter  
5. 倒入已墊紙的焗盤抹平,180c焗約15 分鐘
     Pour into lined baking tray and bake at 180c for 15 mins
    

芒果慕思 Mango mousse
芒果蓉  Mango purée/pulp   100g
糖 Sugar   20g
魚膠粉 Gelatine   4g
淡忌廉 Whipping cream 35%   100g

1. 將魚膠粉和糖混合,然後加芒果蓉攪勻
     Mix gelatin and sugar, then add in mango purée/pulp
2. 煲/微波爐加熱至糖和魚膠溶解即可
     Boil/microwave mixture until sugar and gelatin all dissolved   
3. 待涼至暖/40c
     Let cool to warm/40c   
4. 打起淡忌亷至約5-6成
     Whip cream to thicken    
5. 加芒果蓉拌勻即可待用
     Mix cream with mango mixture and ready to assemble
    

組合 To assemble
1. 用圓曲奇模級出大和小的蛋糕片然後切碎剩餘的蛋糕
    Cut cake with round cookie cutter and chop the remaining cake into fine pieces
    


2. 倒一層芒果慕絲入半圓模中
     Pour a layer of mango mousse into dome mould    
3. 輕輕壓入一片小蛋糕
     Press the smaller cake slice into mousse
     


4. 倒入慕絲至滿
     Pour another layer of mousse
      


5. 壓上一片大蛋糕片然後入雪櫃冰硬
     Press the bigger cake slice on mousse then frozen
   


6. 脫模後抺上一層打起忌廉 
     Remove from mould then spread whipped cream to cover all the surface 
      


7. 將忌廉壓上蛋糕碎粘著
     Press fine cake pieces on the whipped cream     
8. 用朱古力裝飾成小雞狀
     Decorate with chocolate
