蜜桃忌廉蛋糕 Peach cream cake
以前在香港時,如做忌廉蛋糕多數採用植脂忌廉,因為不用加糖加味,打起就用得,還可以貯存在冰格中,保質期長,方便又不太昂貴。
但在多倫多卻很難買到,加上姪女說植脂的產品是非常不健康,因它不是真正的乳製品,而是植物油加工而成,所以現在都轉用了35%的忌廉了!
雪芳蛋糕 Chiffon cake
奶 Milk 60g
牛油 Butter 40g
低筋麵粉 Cake flour 80g
粟粉 Corn starch 7g
蛋黃 Egg yolk 4 pcs
蛋白 Egg white 4 pcs
糖 Sugar 80g
檸檬汁 Lemon juice 2 tsp
1. 麵粉加粟粉混和過篩待用

2.加熱奶和牛油,然後加入巳篩粉類攪勻

3. 加入蛋黃攪勻至滑待用

4. 蛋白加檸檬汁加糖打至硬

5. 將1/3蛋白加入麵糊中攪拌至全混合

6. 再將餘下蛋白卷入即可

7. 倒入已墊紙圓型蛋糕模中

8. 180c 焗約 20 分鐘

9. 脫模後放上架上待涼

10. 橫切成2蛋糕片待用

淡忌廉 Cream 35% 400g
糖霜 Icing sugar 40g
溫尼拿醬 Vanilla paste 1 tsp
1. 在一雪凍大碗中混合所有材料

2. 用手提打蛋機打至約8-9成硬身待

組合 To assemble
1. 將一片蛋糕放上轉盤上
